Penne with Chili-Rubbed Flank Steak and Pineapple Salsa

One way I know that dinner has been excellent - I'm looking forward to eating the leftovers for lunch before we're even finished clearing the table. David got stuck with dinner making duty tonight. I'd picked out the recipe and bought the ingredients but got side-tracked helping plan a medieval studies project and study for a french test around the dinner hour. That might be another reason why I liked this pasta so much. Everything tastes better when you just show up and dinner is served. I'm proud of David for sticking with this dish. It included weird things like red onion and jalapeƱo pepper (weird is a relative term, remember). And at the point he ended up with a bowlful of this, he wasn't sure this was going to be a hit:


Black Pepper Molasses Pulled Chicken Sandwiches

These sandwiches are great when you feel like pulled pork but it's Monday night and that isn't going to happen. I didn't quite believe these sandwiches were going to work the first time I tried the recipe. I've never cooked with boneless, skinless chicken thighs before and I was a bit suspect that they would cook in 20 minutes. But cook they did, and cook well. The meat is moist, tender and made all the more flavourful by a sweet/spicy sauce that all of my boys enjoyed. I served these on little slider buns (because then I could have two) but obviously you can use regular-sized buns if you like.

Hilton Head Eats

After a week spent on Hilton Head Island (South Carolina) I can say with confidence that I want to go back. For the sun, the sand, the surf and the food. We ate so well when we were on Hilton Head. All independent restaurants with great menus, friendly service and excellent food. So here's where we ate.

Rhubarb Loaf

Local rhubarb has been appearing at the market, just in time for a Sunday baking/therapy session.  The weekend was so beautiful for being out of doors I was glad to have prepared these loaves (the recipe yields two) just after breakfast. The brown sugar/butter/cinnamon topping made the house smell dreamy while I cleaned up the kitchen. And I got to spend the rest of the day outside.

English Muffins

This past Saturday morning around 7 a.m. I rolled over and said to David


I'm going to go downstairs and make some English muffins

David knows me well enough to know that I didn't mean


I'm going to go toast myself an English muffin. Maybe slap on some jam, or if I'm feeling ambitious an egg and some cheese

Because this is what I do. I wake up on a random Saturday and decide to make marshmallows. Or even doughnuts. I don't know why I do, but I do. So here's how it went.
